Ingredients

  • 1 large head of cauliflower
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup almond flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 425°F. Line a baking sheet with parchment paper.
  2. Remove the leaves from the cauliflower and trim the stem. Slice the cauliflower head into 1-inch thick steaks.
  3. In a shallow bowl, combine almond flour, garlic powder, onion powder, smoked paprika, salt, and black pepper.
  4. In another bowl, whisk the eggs until well beaten.
  5. Dip each cauliflower steak into the egg mixture, then coat it in the almond flour mixture.
  6. Place the coated cauliflower steaks on the prepared baking sheet and drizzle olive oil over the top.
  7. Sprinkle shredded cheddar cheese and grated Parmesan cheese evenly over the steaks.
  8. Bake for 25-30 minutes, or until the cauliflower is tender and the cheese is golden and crispy.
  9. Remove from the oven and let cool for a few minutes. Garnish with chopped parsley before serving.
