Ingredients
- 1 pound fresh green beans, trimmed
- 2 tablespoons vegetable oil
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 red bell pepper, sliced
- 1 cup sliced mushrooms
- 3 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 teaspoon sugar
- Salt and pepper to taste
- Sesame seeds for garnish (optional)
Instructions
- Heat the vegetable oil in a large skillet or wok over medium-high heat.
- Add the green beans and stir-fry for about 3-4 minutes until they start to become tender and slightly blistered.
- Add the minced garlic and grated ginger to the skillet, stirring quickly to avoid burning, and cook for an additional 1 minute.
- Add the sliced red bell pepper and mushrooms, and continue to stir-fry for another 3-4 minutes until the vegetables are tender-crisp.
- In a small bowl, mix together the soy sauce, rice vinegar, sesame oil, and sugar. Pour this sauce over the vegetables in the skillet and toss to coat evenly. Cook for an additional 1-2 minutes.
- Season with salt and pepper to taste. Remove from heat and garnish with sesame seeds if desired.

- For added protein, consider adding cooked chicken, shrimp, or tofu to the stir-fry.
