Description

A delicious recipe for Crispy Honey BBQ Chicken served with creamy Parmesan Mashed Potatoes.


Ingredients

  • 2 pounds chicken thighs, skin-on and bone-in
  • 1 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 large eggs
  • 1 cup breadcrumbs
  • 1 cup honey BBQ sauce
  • 2 tablespoons olive oil
  • 2 pounds russet potatoes, peeled and cubed
  • ½ cup milk
  • 4 tablespoons unsalted butter
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F. Line a baking sheet with parchment paper.
  2. In a large bowl, combine flour, garlic powder, onion powder, smoked paprika, salt, and black pepper.
  3. In a separate bowl, whisk the eggs.
  4. Place breadcrumbs in a third bowl.
  5. Dip each chicken thigh first into the flour mixture, then into the eggs, and finally coat with breadcrumbs. Place the coated chicken on the prepared baking sheet.
  6. Drizzle olive oil over the chicken and bake for 35-40 minutes, or until the chicken is golden brown and cooked through. Brush with honey BBQ sauce during the last 10 minutes of baking.
  7. While the chicken is baking, prepare the mashed potatoes. Boil the cubed potatoes in salted water until tender, about 15-20 minutes.
  8. Drain the potatoes and return them to the pot. Add milk, butter, and Parmesan cheese. Mash until smooth and creamy. Season with salt and pepper to taste.
  9. Serve the crispy chicken with a generous scoop of Parmesan mashed potatoes.

Notes

  • For extra crunch, try adding crushed cornflakes to the breadcrumb mixture.
  • You can substitute chicken thighs with chicken breasts for a leaner option.
