Ingredients
For the Potatoes:
- Small potatoes (about 2 inches in diameter)
- Olive oil
- Kosher salt
For the Toppings:
- Sliced cheese (Colby Jack or your choice), cut into small squares
- Light sour cream
- Cooked bacon, chopped
- Sliced green onions
Instructions
- Prep the Potatoes: Slice each potato multiple times without cutting all the way through. Drizzle with olive oil and sprinkle with kosher salt.
- Bake: Place potatoes on a baking sheet and roast at 400°F (200°C) for 30 minutes, or until tender.
- Add Cheese: Insert small cheese squares into the slits of each potato and return to the oven for 5–10 minutes, until the cheese is melted.
