Ingredients

For the Potatoes:

  • Small potatoes (about 2 inches in diameter)
  • Olive oil
  • Kosher salt

For the Toppings:

  • Sliced cheese (Colby Jack or your choice), cut into small squares
  • Light sour cream
  • Cooked bacon, chopped
  • Sliced green onions

Instructions

  • Prep the Potatoes: Slice each potato multiple times without cutting all the way through. Drizzle with olive oil and sprinkle with kosher salt.
