Ingredients

For the Smashed Potatoes:

  • 1 ½ lbs baby potatoes (golden or red)
  • 3 tablespoons olive oil
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika
  • Salt and black pepper to taste
  • 1 cup freshly grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley (optional, for garnish)

For the Creamy Garlic Dip:

  • ½ cup sour cream
  • ½ cup plain Greek yogurt
  • 1 clove garlic, minced
  • 1 tablespoon lemon juice (freshly squeezed)
  • 1 tablespoon olive oil
  • 1 teaspoon dried dill (or fresh dill, finely chopped)
  • Salt and black pepper to taste

 



Instructions

  1. Prepare the Potatoes:
    • Bring a large pot of salted water to a boil. Add baby potatoes and cook for 15-20 minutes, until fork-tender.
    • Drain the potatoes and allow them to cool slightly.
  2. Smash and Season:
    • Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper or grease it lightly.
    • Place the potatoes on the baking sheet. Use a potato masher, the bottom of a glass, or a large spoon to gently flatten each one.
    • Drizzle with olive oil and sprinkle with garlic powder, onion powder, paprika, salt, and black pepper.
  3. Bake to Perfection:
    • Roast the potatoes for 20 minutes.
    • Remove from the oven and sprinkle the grated Parmesan cheese over the potatoes.
    • Return to the oven and bake for an additional 10-15 minutes, until the edges are crispy and the cheese is golden brown.
  4. Make the Garlic Dip:
    • In a small bowl, whisk together sour cream, Greek yogurt, minced garlic, lemon juice, olive oil, and dill.
    • Season with salt and black pepper to taste.
    • Cover and refrigerate for at least 20 minutes to allow flavors to meld.
  5. Serve and Enjoy:
    • Transfer the crispy smashed potatoes to a serving platter. Garnish with fresh parsley if desired.
    • Serve alongside the chilled garlic dip for an irresistible combination.
