Ingredients
For the Smashed Potatoes:
- 1 ½ lbs baby potatoes (golden or red)
- 3 tablespoons olive oil
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon paprika
- Salt and black pepper to taste
- 1 cup freshly grated Parmesan cheese
- 2 tablespoons chopped fresh parsley (optional, for garnish)
For the Creamy Garlic Dip:
- ½ cup sour cream
- ½ cup plain Greek yogurt
- 1 clove garlic, minced
- 1 tablespoon lemon juice (freshly squeezed)
- 1 tablespoon olive oil
- 1 teaspoon dried dill (or fresh dill, finely chopped)
- Salt and black pepper to taste
Instructions
- Prepare the Potatoes:
- Bring a large pot of salted water to a boil. Add baby potatoes and cook for 15-20 minutes, until fork-tender.
- Drain the potatoes and allow them to cool slightly.
- Smash and Season:
- Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper or grease it lightly.
- Place the potatoes on the baking sheet. Use a potato masher, the bottom of a glass, or a large spoon to gently flatten each one.
- Drizzle with olive oil and sprinkle with garlic powder, onion powder, paprika, salt, and black pepper.
- Bake to Perfection:
- Roast the potatoes for 20 minutes.
- Remove from the oven and sprinkle the grated Parmesan cheese over the potatoes.
- Return to the oven and bake for an additional 10-15 minutes, until the edges are crispy and the cheese is golden brown.
- Make the Garlic Dip:
- In a small bowl, whisk together sour cream, Greek yogurt, minced garlic, lemon juice, olive oil, and dill.
- Season with salt and black pepper to taste.
- Cover and refrigerate for at least 20 minutes to allow flavors to meld.
- Serve and Enjoy:
