Description
Crispy Potato Cakes are deliciously golden brown patties made from mashed potatoes, flour, and Parmesan cheese, perfect for a snack or side dish.
Ingredients
- 2 large russet potatoes (about 1.5 pounds), peeled and cubed
- 1/2 cup all-purpose flour
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped green onions
- 1 large egg, beaten
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup vegetable oil (for frying)
Instructions
- Place the cubed potatoes in a large pot and cover with water. Bring to a boil and cook until tender, about 15-20 minutes. Drain and let cool slightly.
- In a large bowl, mash the cooked potatoes until smooth.
- Add the flour, Parmesan cheese, green onions, beaten egg, garlic powder, onion powder, salt, and black pepper to the mashed potatoes. Mix until well combined.
- Shape the potato mixture into patties, about 1/2 inch thick. You should have about 8-10 cakes.
- Heat the vegetable oil in a large skillet over medium heat. Once hot, add the potato cakes in batches, being careful not to overcrowd the pan.
- Fry each cake for about 3-4 minutes on each side or until golden brown and crispy. Remove and drain on paper towels.
- Serve warm with sour cream or your favorite dipping sauce.
Notes
- For added flavor, mix in cooked bacon bits or shredded cheese into the potato mixture.
- To make these cakes healthier, bake them in the oven at 425°F for 20-25 minutes, flipping halfway through, until crispy and golden.
