Description

Crispy Potato Cakes are deliciously golden brown patties made from mashed potatoes, flour, and Parmesan cheese, perfect for a snack or side dish.


Ingredients

  • 2 large russet potatoes (about 1.5 pounds), peeled and cubed
  • 1/2 cup all-purpose flour
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped green onions
  • 1 large egg, beaten
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup vegetable oil (for frying)

Instructions

  1. Place the cubed potatoes in a large pot and cover with water. Bring to a boil and cook until tender, about 15-20 minutes. Drain and let cool slightly.
  2. In a large bowl, mash the cooked potatoes until smooth.
  3. Add the flour, Parmesan cheese, green onions, beaten egg, garlic powder, onion powder, salt, and black pepper to the mashed potatoes. Mix until well combined.
  4. Shape the potato mixture into patties, about 1/2 inch thick. You should have about 8-10 cakes.
  5. Heat the vegetable oil in a large skillet over medium heat. Once hot, add the potato cakes in batches, being careful not to overcrowd the pan.
  6. Fry each cake for about 3-4 minutes on each side or until golden brown and crispy. Remove and drain on paper towels.
  7. Serve warm with sour cream or your favorite dipping sauce.

Notes

  • For added flavor, mix in cooked bacon bits or shredded cheese into the potato mixture.
  • To make these cakes healthier, bake them in the oven at 425°F for 20-25 minutes, flipping halfway through, until crispy and golden.
