Ingredients

  • 2 cups mashed potatoes (about 2 large potatoes)
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup finely chopped green onions
  • 1/4 cup all-purpose flour
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup vegetable oil (for frying)

Instructions

  1. In a large bowl, combine the mashed potatoes, cheddar cheese, green onions, flour, egg, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
  2. Heat the vegetable oil in a large skillet over medium heat.
  3. Using a 1/4 cup measuring cup, scoop the potato mixture and form it into a patty. Carefully place the patty in the hot oil. Repeat with the remaining mixture, making sure not to overcrowd the skillet.
  4. Cook each potato cake for about 4-5 minutes on each side, or until golden brown and crispy. Remove from the skillet and place on a paper towel-lined plate to drain excess oil.
  5. Serve warm with sour cream or your favorite dipping sauce.
