Ingredients
- 2 cups mashed potatoes (about 2 large potatoes)
- 1/2 cup shredded cheddar cheese
- 1/4 cup finely chopped green onions
- 1/4 cup all-purpose flour
- 1 large egg
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup vegetable oil (for frying)
Instructions
- In a large bowl, combine the mashed potatoes, cheddar cheese, green onions, flour, egg, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
- Heat the vegetable oil in a large skillet over medium heat.
- Using a 1/4 cup measuring cup, scoop the potato mixture and form it into a patty. Carefully place the patty in the hot oil. Repeat with the remaining mixture, making sure not to overcrowd the skillet.
- Cook each potato cake for about 4-5 minutes on each side, or until golden brown and crispy. Remove from the skillet and place on a paper towel-lined plate to drain excess oil.
- Serve warm with sour cream or your favorite dipping sauce.
Notes
- For added flavor, try mixing in cooked bacon bits or herbs like parsley or dill into the potato mixture.
- If you prefer a healthier option, bake the potato cakes at 400°F for 20-25 minutes, flipping halfway through, until crispy and golden.
