Crispy Potato Mochi is a delightful crunchy treat made from mashed potatoes and glutinous rice flour, perfect for snacking or as a side dish.
Ingredients
- 2 cups mashed potatoes (about 2 large potatoes)
- 1 cup glutinous rice flour (sweet rice flour)
- 1/2 teaspoon salt
- 1 tablespoon vegetable oil (plus more for frying)
- 1/4 teaspoon garlic powder (optional)
- 1/4 teaspoon onion powder (optional)
- Chopped green onions for garnish (optional)
Instructions
- Begin by peeling and boiling the potatoes until tender, about 15-20 minutes. Drain and mash until smooth. Allow to cool slightly.
- In a large bowl, combine the mashed potatoes, glutinous rice flour, salt, vegetable oil, and optional garlic and onion powders. Mix until a dough forms.
- Divide the dough into equal portions (about 8-10 balls). Flatten each ball into a patty about 1/2 inch thick.
- Heat a non-stick skillet over medium heat and add a thin layer of vegetable oil. Once hot, add the mochi patties to the skillet.
- Cook for about 4-5 minutes on each side, or until golden brown and crispy. Adjust the heat as necessary to prevent burning.
- Remove from the skillet and place on a paper towel to absorb excess oil. Garnish with chopped green onions if desired.
Notes
- For a cheesy twist, add 1/2 cup of shredded cheese to the dough before cooking.
- Serve with soy sauce or a spicy dipping sauce for added flavor.
