Ingredients
- 2 large russet potatoes, peeled and grated
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 2 tablespoons all-purpose flour
- 1 large egg, beaten
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup chopped green onions (optional)
- Cooking oil for frying
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the grated potatoes, salt, black pepper, garlic powder, onion powder, flour, and beaten egg. Mix until well combined.
- Using your hands, form small nests by taking a handful of the potato mixture and shaping it into a cup on the baking sheet. Make sure the nests are about 3 inches in diameter and have a hollow center.
- Bake the potato nests in the preheated oven for 25-30 minutes, or until they are golden brown and crispy.
- While the nests are baking, mix the shredded cheddar cheese and sour cream in a bowl. Add chopped green onions if desired.
- Once the nests are baked, remove them from the oven and let them cool slightly. Carefully fill each nest with the cheesy mixture.
- Return the filled nests to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let cool for a few minutes before serving.
Notes
- For a spicier version, add diced jalapeños to the cheese mixture.
- You can substitute the cheddar cheese with mozzarella or pepper jack for different flavor profiles.
