A delicious and crispy potato dish, perfect for breakfast or as a side.
Ingredients
- 2 large russet potatoes (about 1.5 pounds)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil or butter
- 1/4 cup grated Parmesan cheese (optional)
- Chopped fresh herbs (such as parsley or chives) for garnish (optional)
Instructions
- Peel the potatoes and grate them using a box grater or food processor. Place the grated potatoes in a clean kitchen towel and squeeze out as much moisture as possible.
- In a large bowl, combine the grated potatoes, salt, and black pepper. If using, add the grated Parmesan cheese and mix well.
- Heat 1 tablespoon of olive oil or butter in a large non-stick skillet over medium heat. Once hot, add the potato mixture, pressing it down firmly with a spatula to form an even layer.
- Cook for about 5-7 minutes until the bottom is golden brown and crispy. Carefully flip the rosti using a large plate or another skillet, adding the remaining oil or butter to the pan.
- Cook the other side for another 5-7 minutes until golden brown and crispy. If desired, you can cover the skillet with a lid to help it cook through.
- Once cooked, transfer the rosti to a cutting board and let it cool for a minute. Cut into wedges and garnish with fresh herbs if desired.
Notes
- For a spicier version, add 1/4 teaspoon of cayenne pepper or paprika to the potato mixture.
- Try adding finely chopped onions or garlic for extra flavor before cooking.
