A delicious and healthy recipe for crispy veggie burgers made with quinoa, black beans, and fresh vegetables.
Ingredients
- 1 cup cooked quinoa
- 1 cup black beans, drained and rinsed
- 1/2 cup breadcrumbs
- 1/2 cup grated carrots
- 1/2 cup finely chopped bell pepper (any color)
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 large egg
- 2 tablespoons olive oil (for cooking)
Instructions
- In a large bowl, mash the black beans with a fork until mostly smooth.
- Add the cooked quinoa, breadcrumbs, grated carrots, bell pepper, onion, garlic, cumin, smoked paprika, salt, and black pepper. Mix well until all ingredients are combined.
- Add the egg to the mixture and stir until fully incorporated. If the mixture is too wet, add a little more breadcrumbs until it holds together.
- Divide the mixture into 4 equal portions and shape each portion into a patty.
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Once hot, add the patties and cook for about 4-5 minutes on each side, or until golden brown and crispy.
- Serve the veggie burgers on buns with your favorite toppings, such as lettuce, tomato, avocado, or sauce.
Notes
- For a spicier kick, add chopped jalapeños or a dash of hot sauce to the mixture.
- You can also substitute the black beans with chickpeas for a different flavor profile.
