Description

Crispy Zucchini Fritters are a delicious and crunchy snack or side dish made from grated zucchini, flour, and Parmesan cheese, perfect for any occasion.

Ingredients

  • 2 medium zucchinis (about 1 pound), grated
  • 1 teaspoon salt
  • 1/2 cup all-purpose flour
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 1/4 cup chopped fresh parsley
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 cup olive oil (for frying)

Instructions

  1. Start by grating the zucchinis using a box grater or food processor. Place the grated zucchini in a clean kitchen towel and squeeze out as much moisture as possible. This step is crucial for achieving crispy fritters.
  2. In a large mixing bowl, combine the grated zucchini and salt. Let it sit for about 10 minutes, then squeeze out any remaining liquid.
  3. Add the flour, Parmesan cheese, eggs, parsley, black pepper, garlic powder, and onion powder to the bowl with the zucchini. Mix until all ingredients are well combined.
  4. Heat olive oil in a large skillet over medium heat. Once the oil is hot, scoop about 1/4 cup of the zucchini mixture and flatten it slightly in the skillet. Repeat with additional fritters, making sure not to overcrowd the pan.
  5. Cook each fritter for about 3-4 minutes on each side or until golden brown and crispy. Remove from the skillet and place on a paper towel-lined plate to absorb excess oil.
  6. Serve warm, garnished with extra parsley or a dollop of sour cream or yogurt if desired.

Notes

  • For a gluten-free option, substitute all-purpose flour with almond flour or a gluten-free flour blend.
  • Add spices like paprika or cayenne pepper for a kick, or incorporate shredded carrots or corn for added flavor and texture.
