Ingredients
- 2 medium zucchinis, sliced into 1/4-inch thick rounds
- 1 cup all-purpose flour
- 2 large eggs
- 1 cup breadcrumbs (preferably panko for extra crunch)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Cooking spray or oil for frying
Instructions
- Preheat the oven to 425°F. Line a baking sheet with parchment paper.
- In a shallow bowl, place the flour. In another bowl, beat the eggs. In a third bowl, combine the breadcrumbs, garlic powder, onion powder, paprika, salt, and pepper.
- Dredge each zucchini slice in the flour, shaking off the excess. Dip it into the beaten eggs, then coat it with the breadcrumb mixture, pressing gently to adhere.
- Arrange the coated zucchini rings in a single layer on the prepared baking sheet. Lightly spray or drizzle with oil to help them crisp up.
- Bake in the preheated oven for 20-25 minutes, flipping halfway through, until golden brown and crispy.
- Serve warm as a snack or appetizer.
Notes
- For extra flavor, try adding grated Parmesan cheese to the breadcrumb mixture.
- You can also experiment with different seasonings such as Italian herbs or cayenne pepper for a spicy kick.
