Ingredients
- 2 cups cooked, shredded chicken
- 4 cups fresh broccoli florets
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper (optional)
- 1 tablespoon olive oil
Instructions
- In a large crockpot, add the cooked, shredded chicken, broccoli florets, diced onion, and minced garlic.
- Pour in the chicken broth and stir to combine all the ingredients.
- Season with salt, black pepper, paprika, and cayenne pepper if using. Stir well.
- Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours until the broccoli is tender.
- Once cooked, stir in the heavy cream and shredded cheddar cheese until melted and creamy.
- Taste and adjust seasoning if necessary. Serve hot.
Notes
- For a lighter version, substitute heavy cream with half-and-half or whole milk.
- Add cooked bacon bits or croutons on top for extra flavor and crunch.
