Description

A creamy and delicious crockpot soup made with chicken, broccoli, and cheddar cheese, perfect for a comforting meal.


Ingredients

  • 2 cups cooked, shredded chicken
  • 4 cups fresh broccoli florets
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 tablespoon olive oil

Instructions

  1. In a large crockpot, add the cooked, shredded chicken, broccoli florets, diced onion, and minced garlic.
  2. Pour in the chicken broth and stir to combine all the ingredients.
  3. Season with salt, black pepper, paprika, and cayenne pepper if using. Stir well.
  4. Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours until the broccoli is tender.
  5. Once cooked, stir in the heavy cream and shredded cheddar cheese until melted and creamy.
  6. Taste and adjust seasoning if necessary. Serve hot.
