Description

A delicious and easy recipe for Crockpot Creamy Pepper Jack Chicken & Broccoli, perfect for a comforting meal.


Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 1 cup cream of chicken soup
  • 1 cup shredded pepper jack cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 4 cups fresh broccoli florets
  • 1 tablespoon olive oil

Instructions

  1. In a large crockpot, combine the chicken breasts, chicken broth, cream of chicken soup, garlic powder, onion powder, paprika, salt, and pepper. Stir to coat the chicken evenly.
  2. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
  3. Once the chicken is cooked, remove it from the crockpot and shred it using two forks. Return the shredded chicken to the crockpot.
  4. Add the shredded pepper jack cheese and broccoli florets to the crockpot. Drizzle with olive oil and stir to combine.
  5. Cover and cook on high for an additional 30 minutes, or until the broccoli is tender and the cheese is melted.
  6. Serve warm over rice, pasta, or on its own.
