A delicious and easy recipe for Crockpot Creamy Pepper Jack Chicken & Broccoli, perfect for a comforting meal.
Ingredients
- 2 pounds boneless, skinless chicken breasts
- 1 cup chicken broth
- 1 cup cream of chicken soup
- 1 cup shredded pepper jack cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 4 cups fresh broccoli florets
- 1 tablespoon olive oil
Instructions
- In a large crockpot, combine the chicken breasts, chicken broth, cream of chicken soup, garlic powder, onion powder, paprika, salt, and pepper. Stir to coat the chicken evenly.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
- Once the chicken is cooked, remove it from the crockpot and shred it using two forks. Return the shredded chicken to the crockpot.
- Add the shredded pepper jack cheese and broccoli florets to the crockpot. Drizzle with olive oil and stir to combine.
- Cover and cook on high for an additional 30 minutes, or until the broccoli is tender and the cheese is melted.
- Serve warm over rice, pasta, or on its own.
Notes
- For a spicier kick, add diced jalapeños or a splash of hot sauce to the crockpot.
- To make it a complete meal, serve with cooked quinoa or whole grain rice for added fiber and nutrients.
