  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 pounds baby potatoes (halved)
  • 2 tablespoons olive oil (divided)
  • 1 medium onion (sliced)
  • 34 cloves garlic (minced)
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • Fresh parsley (chopped for garnish)

Instructions

Step 1: Season the Steak

  1. Toss steak cubes with smoked paprika, garlic powder, onion powder, salt, and black pepper.
  2. Let the steak sit for 5-10 minutes to absorb the flavors.

Step 2: Prep the Potatoes

  1. Wash and halve the baby potatoes.

Step 3: Sear the Steak

  1. Heat 1 tablespoon of olive oil in a skillet over medium-high heat.
  2. Sear steak for 2-3 minutes per side, then transfer to a 6-quart crockpot.

Step 4: Sauté the Aromatics

  1. In the same skillet, add the remaining 1 tablespoon of olive oil.
  2. Cook onions for 3-4 minutes until softened, then add garlic for 30 seconds.
  3. Transfer onions and garlic to the crockpot.

Step 5: Mix the Magic

  1. In the bowl used for seasoning, combine beef broth, Worcestershire sauce, and dried thyme.
  2. Pour the mixture over the steak in the crockpot.

  1. Arrange potatoes around the steak in the crockpot.
