Ingredients
- 2 pounds sirloin steak (cut into 1–1/2 inch cubes)
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 pounds baby potatoes (halved)
- 2 tablespoons olive oil (divided)
- 1 medium onion (sliced)
- 3–4 cloves garlic (minced)
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- Fresh parsley (chopped for garnish)
Instructions
Step 1: Season the Steak
- Toss steak cubes with smoked paprika, garlic powder, onion powder, salt, and black pepper.
- Let the steak sit for 5-10 minutes to absorb the flavors.
Step 2: Prep the Potatoes
- Wash and halve the baby potatoes.
Step 3: Sear the Steak
- Heat 1 tablespoon of olive oil in a skillet over medium-high heat.
- Sear steak for 2-3 minutes per side, then transfer to a 6-quart crockpot.
Step 4: Sauté the Aromatics
- In the same skillet, add the remaining 1 tablespoon of olive oil.
- Cook onions for 3-4 minutes until softened, then add garlic for 30 seconds.
- Transfer onions and garlic to the crockpot.
Step 5: Mix the Magic
- In the bowl used for seasoning, combine beef broth, Worcestershire sauce, and dried thyme.
- Pour the mixture over the steak in the crockpot.
Step 6: Assemble and Cook
- Arrange potatoes around the steak in the crockpot.
- Cover and cook on LOW for 6-8 hours, until the meat and potatoes are fork-tender.
Step 7: Serve and Savor
- Remove steak, slice if necessary, and plate alongside potatoes.
