- 1 ½–2 lbs boneless, skinless chicken (breasts or thighs)
- 1 cup chicken broth (plus 1–2 cups optional)
- 10 oz can Rotel diced tomatoes with green chilies
- 15.25 oz can corn, drained
- 16 oz can navy beans, drained and rinsed
- 1 oz packet Ranch seasoning mix
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp onion powder
For the Creamy Finish:
- 8 oz cream cheese, cubed

- Tortilla chips or cornbread

Instructions
- Prepare the Ingredients:
- In a large slow cooker, combine chicken, chicken broth, Rotel, corn, navy beans, Ranch seasoning mix, chili powder, cumin, and onion powder. Stir well to distribute the spices.
- Cook the Chili:
- Cover the slow cooker and set it to LOW for 6–8 hours or HIGH for 3–4 hours.
- Shred the Chicken:
- Remove the cooked chicken from the crockpot and shred it with two forks. Return the shredded chicken to the crockpot and stir to combine.
- Add the Cream Cheese:
- Add the cubed cream cheese to the crockpot. Stir gently, cover, and cook for an additional 5–10 minutes until the cream cheese melts into the broth.
- Adjust Consistency:
- For a thinner chili, stir in 1–2 extra cups of chicken broth.
- Serve and Garnish:
- Ladle the chili into bowls and serve hot. Add your favorite toppings like tortilla chips, cornbread, or grated cheese for extra flavor and texture.
