Ingredients
Cookie Dough:
- 3/4 cup butter, softened
- 1 1/4 cup brown sugar

- 1 1/2 cups crushed graham crackers

Cream Cheese Frosting:

Caramel Topping:
- 5 tbsp butter
- 1/3 cup brown sugar
- 1/2 cup whipping cream
- 1/4 tsp salt
- 2 tsp vanilla extract
Instructions
- Preheat and Prep:
- Preheat oven to 350°F (175°C).
- Line two baking sheets with parchment paper.
- Make the Cookie Dough:
- Cream butter, brown sugar, and granulated sugar until smooth.
- Add eggs and vanilla extract; mix until well combined.
- Gradually add flour, salt, baking powder, and baking soda. Mix until just combined.
- Fold in crushed graham crackers.
- Shape and Bake:
- Scoop dough into 2-inch balls and roll in crushed graham crackers.
- Place on prepared baking sheets and flatten slightly.
- Bake for 8–10 minutes until edges are lightly golden.

- Prepare Cream Cheese Frosting:

- Combine butter, brown sugar, whipping cream, and salt in a saucepan.

- Assemble the Cookies:
