Description

A refreshing and crunchy slaw made with a variety of colorful vegetables and a flavorful sesame dressing.


Ingredients

  • 2 cups green cabbage, finely shredded
  • 1 cup red cabbage, finely shredded
  • 1 cup carrots, grated
  • 1/2 cup bell pepper, thinly sliced (any color)
  • 1/4 cup green onions, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup sesame seeds, toasted
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons sesame oil
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon fresh ginger, grated
  • 1 teaspoon garlic, minced
  • 1 teaspoon sesame seeds

Instructions

  1. In a large bowl, combine the green cabbage, red cabbage, carrots, bell pepper, green onions, cilantro, and toasted sesame seeds. Toss well to mix the vegetables evenly.
  2. In a separate bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey or maple syrup, grated ginger, minced garlic, and sesame seeds until well combined.
  3. Pour the dressing over the slaw mixture and toss until all the vegetables are coated with the dressing.
  4. For best flavor, let the slaw sit in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
  5. Serve chilled or at room temperature as a side dish or light meal.

Notes

  • Add protein by including shredded rotisserie chicken or edamame for a heartier dish.
