Description
A refreshing and crunchy slaw made with a variety of colorful vegetables and a flavorful sesame dressing.
Ingredients
- 2 cups green cabbage, finely shredded
- 1 cup red cabbage, finely shredded
- 1 cup carrots, grated
- 1/2 cup bell pepper, thinly sliced (any color)
- 1/4 cup green onions, chopped
- 1/4 cup fresh cilantro, chopped
- 1/4 cup sesame seeds, toasted
- 1/4 cup soy sauce
- 2 tablespoons rice vinegar
- 2 tablespoons sesame oil
- 1 tablespoon honey or maple syrup
- 1 teaspoon fresh ginger, grated
- 1 teaspoon garlic, minced
- 1 teaspoon sesame seeds
Instructions
- In a large bowl, combine the green cabbage, red cabbage, carrots, bell pepper, green onions, cilantro, and toasted sesame seeds. Toss well to mix the vegetables evenly.
- In a separate bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey or maple syrup, grated ginger, minced garlic, and sesame seeds until well combined.
- Pour the dressing over the slaw mixture and toss until all the vegetables are coated with the dressing.
- For best flavor, let the slaw sit in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
- Serve chilled or at room temperature as a side dish or light meal.
Notes
- Add protein by including shredded rotisserie chicken or edamame for a heartier dish.
- For a spicy kick, add sliced jalapeños or a dash of sriracha to the dressing.
