Ingredients
- 2 cups green cabbage, finely shredded
- 1 cup red cabbage, finely shredded
- 1 cup carrots, grated
- 1/2 cup green onions, sliced
- 1/2 cup cilantro, chopped
- 1/4 cup sliced almonds or peanuts (optional)
- 1/4 cup sesame oil
- 2 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon honey or maple syrup
- 1 teaspoon fresh ginger, grated
- 1 teaspoon garlic, minced
- 1 teaspoon sesame seeds
Instructions
- In a large bowl, combine the green cabbage, red cabbage, carrots, green onions, cilantro, and nuts if using. Toss well to mix all the ingredients evenly.
- In a separate small bowl, whisk together the sesame oil, soy sauce, rice vinegar, honey or maple syrup, ginger, garlic, and sesame seeds until well combined.
- Pour the dressing over the cabbage mixture and toss until all the vegetables are coated evenly.
- For the best flavor, let the slaw sit for at least 15 minutes before serving to allow the flavors to meld.
- Serve chilled or at room temperature as a side dish or light meal.
