Ingredients
- 1 cup cornmeal

- 1 large egg
- 1 cup corn kernels (fresh, frozen, or canned)

Instructions
- In a large mixing bowl, combine the cornmeal, flour, baking powder, salt, black pepper, and paprika. Mix well to combine the dry ingredients.
- In a separate bowl, whisk together the buttermilk and egg until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Gently fold in the corn kernels and shredded cheddar cheese until evenly distributed.
- Heat about 2 inches of vegetable oil in a deep skillet or pot over medium heat until it reaches 350°F.
- Using a tablespoon, drop spoonfuls of the batter into the hot oil, being careful not to overcrowd the pan. Fry in batches for about 3-4 minutes, or until golden brown and crispy.
- Remove the nuggets with a slotted spoon and drain on paper towels.
- Serve warm with your favorite dipping sauce.
