Description

A refreshing and crunchy slaw featuring a mix of cabbages, carrots, and a zesty chipotle dressing, topped with Fritos for an extra crunch.


Ingredients

  • 2 cups green cabbage, finely shredded
  • 1 cup red cabbage, finely shredded
  • 1 cup carrots, grated
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely chopped
  • 1/2 cup cilantro, chopped
  • 1 cup Fritos corn chips
  • 1/2 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 12 teaspoons chipotle chili powder (adjust to taste)
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine the green cabbage, red cabbage, carrots, corn, cherry tomatoes, red onion, and cilantro. Toss well to mix all the vegetables evenly.
  2. In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, honey, chipotle chili powder, salt, and pepper until smooth.
  3. Pour the dressing over the slaw mixture and toss until all the vegetables are well coated.
  4. Chill the slaw in the refrigerator for at least 30 minutes to allow the flavors to meld.
  5. Just before serving, fold in the Fritos corn chips for added crunch. Serve immediately.

Notes

  • For a lighter version, substitute Greek yogurt for half of the mayonnaise.
