Description
A refreshing and crunchy slaw featuring a mix of cabbages, carrots, and a zesty chipotle dressing, topped with Fritos for an extra crunch.
Ingredients
- 2 cups green cabbage, finely shredded
- 1 cup red cabbage, finely shredded
- 1 cup carrots, grated
- 1 cup corn (fresh, frozen, or canned)
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, finely chopped
- 1/2 cup cilantro, chopped
- 1 cup Fritos corn chips
- 1/2 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey
- 1–2 teaspoons chipotle chili powder (adjust to taste)
- Salt and pepper to taste
Instructions
- In a large mixing bowl, combine the green cabbage, red cabbage, carrots, corn, cherry tomatoes, red onion, and cilantro. Toss well to mix all the vegetables evenly.
- In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, honey, chipotle chili powder, salt, and pepper until smooth.
- Pour the dressing over the slaw mixture and toss until all the vegetables are well coated.
- Chill the slaw in the refrigerator for at least 30 minutes to allow the flavors to meld.
- Just before serving, fold in the Fritos corn chips for added crunch. Serve immediately.
Notes
- For a lighter version, substitute Greek yogurt for half of the mayonnaise.
- Add diced avocado for creaminess and extra flavor, or include black beans for added protein and fiber.
