A simple and delicious crustless pie made with fresh broccoli, onion, and cheese, perfect for a healthy meal.
Ingredients
- 2 cups fresh broccoli florets, chopped
- 1 medium onion, diced
- 1 tablespoon olive oil
- 4 large eggs
- 1 cup milk
- 1 cup shredded cheddar cheese
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 1/4 cup grated Parmesan cheese
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9-inch pie dish with cooking spray or a little olive oil.
- In a skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Add the chopped broccoli and cook for an additional 3-4 minutes until slightly tender. Remove from heat and let cool slightly.
- In a large mixing bowl, whisk together the eggs, milk, garlic powder, salt, black pepper, and red pepper flakes (if using).
- Stir in the sautéed broccoli and onion mixture, followed by the shredded cheddar cheese. Mix until well combined.
- Pour the mixture into the prepared pie dish and sprinkle the grated Parmesan cheese evenly on top.
- Bake in the preheated oven for 30-35 minutes, or until the pie is set and the top is golden brown.
- Allow to cool for about 10 minutes before slicing and serving.
Notes
- For a vegetarian option, add diced bell peppers or mushrooms to the sautéed vegetables.
- To make it gluten-free, ensure all ingredients, especially the cheese, are certified gluten-free.
