Description

A simple and delicious crustless pie made with fresh broccoli, onion, and cheese, perfect for a healthy meal.


Ingredients

  • 2 cups fresh broccoli florets, chopped
  • 1 medium onion, diced
  • 1 tablespoon olive oil
  • 4 large eggs
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch pie dish with cooking spray or a little olive oil.
  2. In a skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Add the chopped broccoli and cook for an additional 3-4 minutes until slightly tender. Remove from heat and let cool slightly.
  3. In a large mixing bowl, whisk together the eggs, milk, garlic powder, salt, black pepper, and red pepper flakes (if using).
  4. Stir in the sautéed broccoli and onion mixture, followed by the shredded cheddar cheese. Mix until well combined.
  5. Pour the mixture into the prepared pie dish and sprinkle the grated Parmesan cheese evenly on top.
  6. Bake in the preheated oven for 30-35 minutes, or until the pie is set and the top is golden brown.
  7. Allow to cool for about 10 minutes before slicing and serving.
