A simple and delightful crustless cranberry pie that is easy to make and perfect for any occasion.
Ingredients
- 1 cup fresh or frozen cranberries
- 1 cup granulated sugar
- 1/2 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
- 3 large eggs
- 1/2 cup milk
- 1/4 cup unsalted butter, melted
Instructions
- Preheat the oven to 350°F. Grease a 9-inch pie dish with cooking spray or butter.
- In a mixing bowl, combine the cranberries and 1/2 cup of the sugar. Let them sit for about 10 minutes to release some juices.
- In another bowl, whisk together the flour, baking powder, salt, and remaining 1/2 cup sugar.
- In a separate bowl, beat the eggs and then add the milk, melted butter, and vanilla extract. Mix well.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Fold in the cranberries.
- Pour the mixture into the prepared pie dish.
- Bake for 45-50 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
- Allow to cool for at least 15 minutes before slicing and serving.
Notes
- For a touch of spice, add 1 teaspoon of cinnamon or nutmeg to the dry ingredients.
- Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream for extra indulgence.
