Ingredients

  • 1 cup fresh or frozen cranberries
  • 1 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 3 large eggs
  • 1/2 cup milk
  • 1/4 cup unsalted butter, melted

Instructions

  1. Preheat the oven to 350°F. Grease a 9-inch pie dish with cooking spray or butter.
  2. In a mixing bowl, combine the cranberries and 1/2 cup of the sugar. Let them sit for about 10 minutes to release some juices.
  3. In another bowl, whisk together the flour, baking powder, salt, and remaining 1/2 cup sugar.
  4. In a separate bowl, beat the eggs and then add the milk, melted butter, and vanilla extract. Mix well.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Fold in the cranberries.
  6. Pour the mixture into the prepared pie dish.
  7. Bake for 45-50 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  8. Allow to cool for at least 15 minutes before slicing and serving.
