Ingredients
- 2 cups diced cucumber
- 2 cups halved cherry tomatoes
- 1 ripe avocado, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1/4 cup olive oil
- 2 tablespoons lime juice
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- In a large mixing bowl, combine the diced cucumber, halved cherry tomatoes, diced avocado, chopped red onion, and chopped cilantro.
- In a small bowl, whisk together the olive oil, lime juice, garlic powder, salt, and pepper until well combined.
- Pour the dressing over the salad mixture and gently toss to combine, being careful not to mash the avocado.
- Taste and adjust seasoning if necessary.
- Serve immediately or chill in the refrigerator for 15-30 minutes to allow the flavors to meld.
Notes
- For added crunch, include 1/2 cup of diced bell peppers or a handful of mixed greens.
- Substitute lemon juice for lime juice for a different citrus flavor.
