Ingredients

  • 2 cups long-grain white rice
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup raisins
  • 1/2 cup frozen peas
  • 1/4 cup sliced almonds (optional)
  • Fresh cilantro for garnish (optional)

Instructions

  1. Rinse the rice under cold water until the water runs clear. Drain well.
  2. In a large saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic, curry powder, cumin, turmeric, salt, and black pepper. Cook for another 1-2 minutes until fragrant.
  4. Add the rinsed rice to the saucepan and stir to coat the rice with the spice mixture.
  5. Pour in the vegetable broth and bring to a boil. Reduce the heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and the liquid is absorbed.
  6. Once the rice is cooked, remove from heat and fluff with a fork. Stir in the raisins and frozen peas. Cover and let sit for 5 minutes to allow the peas to heat through.
  7. If using, sprinkle sliced almonds on top before serving. Garnish with fresh cilantro if desired.

Notes

  • For a spicier version, add a pinch of cayenne pepper or some chopped jalapeños when sautéing the onions.
