A flavorful twist on traditional chicken salad with a blend of curry and sweet ingredients.
Ingredients
- 3 cups cooked chicken, shredded or diced
- 1/2 cup mayonnaise
- 1/4 cup plain Greek yogurt
- 2 tablespoons curry powder
- 1 tablespoon honey
- 1 tablespoon lime juice
- 1/2 cup celery, diced
- 1/2 cup red grapes, halved
- 1/4 cup sliced almonds
- Salt and pepper to taste
- Lettuce leaves or pita bread for serving
Instructions
- In a large mixing bowl, combine the mayonnaise, Greek yogurt, curry powder, honey, and lime juice. Mix well until smooth.
- Add the shredded chicken, diced celery, halved grapes, and sliced almonds to the bowl. Stir gently to combine all ingredients evenly.
- Season with salt and pepper to taste. Adjust the curry powder and honey if you prefer a stronger flavor or more sweetness.
- Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve the curry chicken salad on a bed of lettuce leaves or in pita bread.
Notes
- For a spicier kick, add a pinch of cayenne pepper or diced jalapeños to the salad.
