A rich and indulgent cheesecake featuring dark chocolate and fresh raspberries, perfect for special occasions.
Ingredients
- 16 ounces cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 8 ounces dark chocolate, melted and cooled
- 1 cup sour cream
- 1 cup fresh raspberries
- 1 cup chocolate cookie crumbs
- 4 tablespoons unsalted butter, melted
Instructions
- Preheat your oven to 325°F.
- In a medium bowl, combine the chocolate cookie crumbs and melted butter. Mix until the crumbs are evenly coated. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the sugar and continue to beat until well combined. Mix in the vanilla extract.
- Add the eggs, one at a time, mixing well after each addition. Pour in the melted dark chocolate and mix until fully incorporated. Finally, fold in the sour cream until smooth.
- Gently fold in the fresh raspberries, being careful not to break them apart. Pour the cheesecake batter over the prepared crust in the springform pan.
- Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and crack the door, allowing the cheesecake to cool in the oven for about 1 hour.
- Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours, preferably overnight, before serving.
Notes
- For a richer flavor, try using a higher percentage of dark chocolate (70% or more).
- You can substitute the raspberries with strawberries or blueberries for a different fruit twist.
- For added texture, consider topping the cheesecake with whipped cream or a drizzle of chocolate sauce before serving.
