Description

Ingredients

  • 16 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 8 ounces dark chocolate, melted and cooled
  • 1 cup sour cream
  • 1 cup fresh raspberries
  • 1 cup chocolate cookie crumbs
  • 4 tablespoons unsalted butter, melted

Instructions

  1. Preheat your oven to 325°F.
  2. In a medium bowl, combine the chocolate cookie crumbs and melted butter. Mix until the crumbs are evenly coated. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.
  3. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the sugar and continue to beat until well combined. Mix in the vanilla extract.
  4. Add the eggs, one at a time, mixing well after each addition. Pour in the melted dark chocolate and mix until fully incorporated. Finally, fold in the sour cream until smooth.

  7. Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours, preferably overnight, before serving.
