Description

Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¼ cup granulated sugar
  • 24 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • ¼ cup all-purpose flour
  • 1 cup semi-sweet chocolate chips
  • ½ cup heavy cream (for ganache)
  • ½ cup granulated sugar (for caramel)
  • ¼ cup unsalted butter (for caramel)
  • ¼ cup heavy cream (for caramel)
  • 1 teaspoon vanilla extract (for caramel)
  • Pinch of salt (for caramel)
  • Whipped cream (optional, for garnish)
  • Chocolate shavings (optional, for garnish)

Instructions

  1. Preheat the oven to 325°F and grease a 9-inch springform pan.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Press the mixture into the bottom of the prepared pan to form the crust. Bake for 10 minutes and let cool.
  3. In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add sugar and vanilla, mixing well. Add eggs one at a time, mixing on low speed. Stir in sour cream and flour until just combined.
  4. Pour the cheesecake filling over the cooled crust and smooth the top. Bake for 55-60 minutes until edges are set and center is slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually.
  5. Remove from the oven and let cool completely at room temperature, then refrigerate for at least 4 hours or overnight.
  6. For the chocolate ganache, heat heavy cream in a saucepan until it simmers. Remove from heat, add chocolate chips, and stir until smooth. Let cool slightly before pouring over the chilled cheesecake.
  7. For the caramel topping, melt sugar in a saucepan until golden brown. Add butter and stir until melted. Slowly pour in heavy cream, stirring until smooth. Remove from heat, add vanilla and salt, and let cool slightly.
  8. Drizzle the caramel over the chocolate ganache layer. Garnish with whipped cream and chocolate shavings if desired.

Notes

  • For a fruity twist, add a layer of fresh berries on top of the ganache before drizzling with caramel.
