Ingredients

  • 1 cup pitted dates, chopped
  • 1 teaspoon baking soda
  • 1 cup boiling water
  • 1/2 cup unsalted butter, softened
  • 1 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • For the toffee sauce:
  • 1 cup brown sugar
  • 1/2 cup heavy cream
  • 1/4 cup unsalted butter
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8-inch square baking dish.
  2. In a bowl, combine the chopped dates and baking soda. Pour the boiling water over the dates and let it sit for about 10 minutes to soften.
  3. In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  5. Fold in the softened date mixture (including the water) until well incorporated. Pour the batter into the prepared baking dish and smooth the top.
  6. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool slightly while you prepare the toffee sauce.
  7. In a saucepan over medium heat, combine the brown sugar, heavy cream, and butter. Stir until the mixture is smooth and begins to bubble. Remove from heat and stir in the vanilla extract.
