Description

A rich and indulgent dessert that combines creamy cheesecake with chocolate fudge and a crunchy pecan crust.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¼ cup granulated sugar
  • 2 (8-ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1 cup semi-sweet chocolate chips
  • ½ cup chopped pecans
  • ¼ cup caramel sauce

Instructions

  1. Preheat the oven to 325°F. Grease a 9-inch springform pan.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and ¼ cup sugar. Press the mixture firmly into the bottom of the prepared springform pan to form the crust.
  3. In a large mixing bowl, beat the softened cream cheese with 1 cup sugar and vanilla extract until smooth and creamy. Add the eggs one at a time, mixing well after each addition. Stir in the sour cream until fully combined.
  4. Melt the chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth. Allow to cool slightly, then fold the melted chocolate into the cream cheese mixture until well combined.
  5. Pour half of the cheesecake batter over the crust. Sprinkle half of the chopped pecans on top, then drizzle with half of the caramel sauce. Pour the remaining cheesecake batter over the top, smoothing it out.
  6. Bake in the preheated oven for 55-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually.
  7. Remove from the oven and let it cool to room temperature, then refrigerate for at least 4 hours or overnight.
  8. Before serving, drizzle the remaining caramel sauce over the top and sprinkle with the remaining pecans.

Notes

  • For a chocolate lover’s twist, substitute the graham cracker crust with an Oreo crust.
  • For a salted caramel flavor, add a pinch of sea salt to the caramel sauce before drizzling it on top.
