Description

A quick and tasty recipe for Delicious Chop Suey Stir-Fry featuring chicken and a variety of colorful vegetables.


Ingredients

  • 2 tablespoons vegetable oil
  • 1 pound boneless chicken breast, thinly sliced
  • 1 cup broccoli florets
  • 1 cup bell pepper, sliced (any color)
  • 1 cup snap peas
  • 1 cup carrots, julienned
  • 1 cup bean sprouts
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1/4 cup soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon cornstarch
  • 1/4 cup water
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • Cooked rice or noodles for serving

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the sliced chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  2. In the same skillet, add the broccoli, bell pepper, snap peas, and carrots. Stir-fry the vegetables for about 3-4 minutes until they are tender-crisp.
  3. Add the garlic and ginger to the skillet and stir-fry for an additional minute until fragrant.
  4. In a small bowl, mix the soy sauce, oyster sauce, cornstarch, and water until smooth. Pour this sauce over the vegetables in the skillet.
  5. Return the cooked chicken to the skillet and stir everything together, cooking for another 2-3 minutes until the sauce thickens and coats the chicken and vegetables.
  6. Drizzle with sesame oil and season with salt and pepper to taste. Serve hot over cooked rice or noodles.

Notes

  • For a spicier version, add red pepper flakes or sliced jalapeños while stir-frying the vegetables.
  • You can also substitute the chicken with tofu or shrimp for a different protein option.
