Description
A rich and creamy cheesecake infused with the delightful flavors of cinnamon rolls, topped with a sweet glaze.
Ingredients
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 4 (8-ounce) packages cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 1/2 cup sour cream
- 1 tablespoon ground cinnamon
- 1/4 cup brown sugar
- 1/2 cup chopped pecans (optional)
- 1/2 cup powdered sugar (for glaze)
- 2 tablespoons milk (for glaze)
Instructions
- Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan with cooking spray or butter.
- In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined. Press the mixture firmly into the bottom of the prepared springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add in the granulated sugar and vanilla extract, mixing until well incorporated.
- Add the eggs one at a time, mixing on low speed after each addition until just combined. Do not overmix.
- Stir in the sour cream until smooth.
- In a small bowl, mix together the ground cinnamon, brown sugar, and chopped pecans (if using).
- Pour half of the cheesecake batter over the cooled crust. Sprinkle half of the cinnamon mixture on top. Pour the remaining cheesecake batter over this layer, then sprinkle the rest of the cinnamon mixture on top. Use a knife or toothpick to swirl the cinnamon mixture into the cheesecake batter gently.
- Bake in the preheated oven for 55-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and crack the door open, allowing the cheesecake to cool in the oven for 1 hour.
- Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight to set completely.
- Before serving, mix the powdered sugar and milk in a small bowl to create a glaze. Drizzle the glaze over the cheesecake.
Notes
- For a richer flavor, try adding a teaspoon of almond extract to the cheesecake batter.
- You can also top the cheesecake with whipped cream and additional pecans for a decorative touch.
- If you prefer a lighter version, substitute Greek yogurt for sour cream.
