Ingredients
For the Crust:
- All-purpose flour: 2 ½ cups
- Unsalted butter: 1 cup, chilled and cubed
- Ice water: 6–8 tablespoons
- Sugar: 1 tablespoon
- Salt: ½ teaspoon
For the Filling:
- Apples: 6–7 medium (Granny Smith or Honeycrisp), peeled, cored, and sliced
- Granulated sugar: ½ cup
- Brown sugar: ¼ cup
- Ground cinnamon: 1 ½ teaspoons
- Ground nutmeg: ¼ teaspoon
- Cornstarch or flour: 2 tablespoons
- Lemon juice: 1 tablespoon
For the Egg Wash:
- Egg: 1, beaten
- Water: 1 tablespoon
Instructions
1. Prepare the Crust:
- In a large bowl, mix the flour, sugar, and salt.
- Add chilled butter cubes and cut them into the flour until the mixture resembles coarse crumbs.
- Gradually add ice water, mixing until the dough comes together.
- Divide into two disks, wrap in plastic, and refrigerate for at least 30 minutes.
2. Make the Filling:
- Toss apple slices with lemon juice in a large bowl.
- Add granulated sugar, brown sugar, cinnamon, nutmeg, and cornstarch. Mix well to coat the apples evenly.
3. Roll Out the Dough:
- Roll out one dough disk on a floured surface into a 12-inch circle. Place it in a 9-inch pie pan, trimming any excess.
- Roll out the second disk for the top crust or cut it into strips for a lattice.
4. Assemble the Pie:
- Pour the apple filling into the crust-lined pan.
- Add the top crust, sealing the edges by crimping or pressing with a fork. If using a lattice crust, weave the strips over the filling.
- Brush the top crust with the egg wash for a golden finish.
5. Bake the Pie:
- Preheat the oven to 375°F (190°C). Place the pie on a baking sheet.
- Bake for 50–60 minutes or until the crust is golden and the filling bubbles. If the edges brown too quickly, cover them with foil.
6. Cool and Serve:
- Let the pie cool for at least 2 hours before slicing. Serve with whipped cream or a scoop of vanilla ice cream.
Notes
- Apples: Use a mix of tart and sweet apples like Granny Smith and Honeycrisp for the best flavor.
- Chilling the Dough: Keeping the dough cold ensures a flaky crust.
- Thickening: Adjust cornstarch based on the juiciness of your apples.
