Instructions

 

1. Prepare the Crust:

  • In a large bowl, mix the flour, sugar, and salt.
  • Add chilled butter cubes and cut them into the flour until the mixture resembles coarse crumbs.
  • Gradually add ice water, mixing until the dough comes together.
  • Divide into two disks, wrap in plastic, and refrigerate for at least 30 minutes.

2. Make the Filling:

  • Toss apple slices with lemon juice in a large bowl.
  • Add granulated sugar, brown sugar, cinnamon, nutmeg, and cornstarch. Mix well to coat the apples evenly.

3. Roll Out the Dough:

  • Roll out one dough disk on a floured surface into a 12-inch circle. Place it in a 9-inch pie pan, trimming any excess.
  • Roll out the second disk for the top crust or cut it into strips for a lattice.

4. Assemble the Pie:

  • Pour the apple filling into the crust-lined pan.
  • Add the top crust, sealing the edges by crimping or pressing with a fork. If using a lattice crust, weave the strips over the filling.
  • Brush the top crust with the egg wash for a golden finish.

5. Bake the Pie:

  • Preheat the oven to 375°F (190°C). Place the pie on a baking sheet.
