Ingredients
- 2 cups all-purpose flour
- 1 ½ teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ cup unsweetened cocoa powder
- 1 cup granulated sugar
- ½ cup unsalted butter, softened
- 1 cup ricotta cheese
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cocoa powder. Set aside.
- In a large mixing bowl, cream the softened butter and sugar together until light and fluffy, about 3-4 minutes.
- Add the ricotta cheese, eggs, and vanilla extract to the butter mixture, mixing until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Do not overmix.
- Gently fold in the chocolate chips.
- Pour half of the batter into the prepared loaf pan. Use a spatula to smooth it out.
- Add the remaining batter on top and swirl it gently with a knife to create a marbled effect.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
Notes
- For a richer flavor, substitute half of the granulated sugar with brown sugar.
- Add a teaspoon of espresso powder to the batter for a mocha twist.
