Dragon Chicken is a delicious and flavorful dish made with tender chicken pieces coated in a savory sauce, stir-fried with colorful vegetables.
Ingredients
- 2 pounds boneless, skinless chicken thighs, cut into bite-sized pieces
- 1/2 cup cornstarch
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup vegetable oil, for frying
- 1/2 cup green bell pepper, diced
- 1/2 cup red bell pepper, diced
- 1/2 cup onion, diced
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1/4 cup soy sauce
- 1/4 cup sweet chili sauce
- 1 tablespoon rice vinegar
- 1 tablespoon honey
- 1 teaspoon sesame oil
- 1/4 teaspoon red pepper flakes (adjust to taste)
- 2 green onions, sliced, for garnish
Instructions
- In a large bowl, combine the cornstarch, salt, and black pepper. Add the chicken pieces and toss until well coated.
- Heat the vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the chicken in a single layer (you may need to do this in batches) and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken and set aside.
- In the same skillet, add the diced green and red bell peppers, onion, garlic, and ginger. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.
- In a small bowl, whisk together the soy sauce, sweet chili sauce, rice vinegar, honey, sesame oil, and red pepper flakes. Pour this sauce over the vegetables in the skillet and stir to combine.
- Return the cooked chicken to the skillet and toss everything together until the chicken is well coated in the sauce. Cook for an additional 2-3 minutes to heat through.
- Serve hot, garnished with sliced green onions.
Notes
- For a healthier option, you can use chicken breast instead of thighs and bake the chicken instead of frying.
- Add more vegetables like broccoli or snap peas for extra nutrition and color.
