Description

A delicious and unique cake that combines chocolate, coconut, and pecans, creating a delightful treat for any occasion.

Ingredients

  • 2 cups shredded coconut
  • 1 cup chopped pecans
  • 1 box (15.25 ounces) chocolate cake mix
  • 1 cup powdered sugar
  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, melted
  • 1/2 cup water
  • 3 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with cooking spray or butter.
  2. Evenly spread the shredded coconut and chopped pecans on the bottom of the prepared baking dish.
  3. In a large mixing bowl, combine the chocolate cake mix, melted butter, water, eggs, and vanilla extract. Mix until well combined and smooth.
  4. Pour the cake batter over the coconut and pecans in the baking dish, spreading it evenly.
  5. In a separate bowl, beat the softened cream cheese and powdered sugar together until smooth. Drop spoonfuls of the cream cheese mixture over the cake batter. Use a knife to swirl it gently into the batter, creating a marbled effect.
  6. Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the cake to cool in the pan for about 15 minutes before serving.

Notes

  • For a richer flavor, try adding a teaspoon of espresso powder to the cake batter.
  • You can also substitute walnuts for pecans if you prefer a different nut.
  • For a festive touch, top the cooled cake with whipped cream or a scoop of vanilla ice cream before serving.
