Ingredients
- 2 cups shredded coconut
- 1 cup chopped pecans
- 1 box (15.25 ounces) chocolate cake mix
- 1 cup powdered sugar
- 8 ounces cream cheese, softened
- 1/2 cup unsalted butter, melted
- 1/2 cup water
- 3 large eggs
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with cooking spray or butter.
- Evenly spread the shredded coconut and chopped pecans on the bottom of the prepared baking dish.
- In a large mixing bowl, combine the chocolate cake mix, melted butter, water, eggs, and vanilla extract. Mix until well combined and smooth.
- Pour the cake batter over the coconut and pecans in the baking dish, spreading it evenly.
- In a separate bowl, beat the softened cream cheese and powdered sugar together until smooth. Drop spoonfuls of the cream cheese mixture over the cake batter. Use a knife to swirl it gently into the batter, creating a marbled effect.
- Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for about 15 minutes before serving.
Notes
- For a richer flavor, try adding a teaspoon of espresso powder to the cake batter.
- You can also substitute walnuts for pecans if you prefer a different nut.
- For a festive touch, top the cooled cake with whipped cream or a scoop of vanilla ice cream before serving.
