Ingredients
1 cup butter, softened
3 ounces cream cheese, softened
1 cup sugar
1 large egg yolk, room temperature
1/2 teaspoon vanilla extract
1/4 teaspoon almond extract
2 1/4 cups all-purpose flour
1/2 teaspoon salt
1/4 teaspoon baking soda
Tinted frosting or colored sugar for decorating
Instructions
- Create the Dough – In a bowl, use a hand or stand mixer to cream together butter, cream cheese, and sugar until fluffy (about 5-7 minutes). Beat in the egg yolk and both extracts until well combined.
- Chill the Dough – In another bowl, whisk together the flour, salt, and baking soda. Gradually add this to the wet mixture, beating just until combined. Cover and refrigerate for 3 hours or until firm.
- Shape the Bunnies – Preheat your oven to 375°F (190°C). On a lightly floured surface, roll out the dough to 1/8-inch thickness. Use bunny-shaped cookie cutters to cut out shapes. Place them 1 inch apart on ungreased baking sheets.
- Bake & Cool – Bake for 8-10 minutes until the edges begin to brown. Let them cool on the pan for 2 minutes, then transfer to a wire rack to cool completely before decorating.
- Decorate & Enjoy! – Use royal icing, buttercream, or colored sugar to decorate your bunny cookies however you like! Get creative with pastel shades and sprinkles.
Notes
- If the dough gets too soft while rolling, place it back in the fridge for 15 minutes.
