Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 large eggs
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 1 cup powdered sugar (for dusting)
  • 1 cup heavy whipping cream
  • 1/4 cup granulated sugar (for filling)
  • 1 teaspoon vanilla extract (for filling)
  • Food coloring (optional, for decoration)
  • Sprinkles (optional, for decoration)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 15×10-inch jelly roll pan and line it with parchment paper. Grease the parchment paper lightly.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, beat the eggs and granulated sugar together on high speed until thick and pale, about 5 minutes. Add the vanilla and almond extracts, mixing until combined.
  4. Gradually fold the flour mixture into the egg mixture until just combined. Be careful not to overmix.
  5. Pour the batter into the prepared jelly roll pan, spreading it evenly. Bake for 12-15 minutes, or until the cake springs back when lightly touched.
  6. While the cake is baking, prepare a clean kitchen towel by dusting it with powdered sugar.
  7. Once the cake is done, remove it from the oven and immediately invert it onto the prepared towel. Carefully peel off the parchment paper.
  8. Starting from one short end, roll the cake up with the towel inside. Let it cool completely in this rolled shape, about 30 minutes.
  9. In a medium bowl, whip the heavy cream with the granulated sugar and vanilla extract until stiff peaks form.
  10. Once the cake has cooled, unroll it gently and spread the whipped cream filling evenly over the surface. Roll the cake back up without the towel.
  11. Place the cake seam-side down on a serving platter. Dust with powdered sugar and decorate with food coloring and sprinkles if desired.
  12. Chill the cake roll in the refrigerator for at least 1 hour before slicing and serving.

Notes

  • For a chocolate version, substitute 1/4 cup of the flour with cocoa powder and add chocolate sprinkles to the filling.
