Ingredients

For the Whoopie Pies: 1 box French vanilla cake mix, 1 large egg, ½ cup unsalted sweet cream butter, 3 cups Easter sprinkles.
For the Fluffy Vanilla Frosting: ½ cup unsalted sweet cream butter (softened), 2 ½ cups powdered sugar, 2 tablespoons heavy whipping cream, 1 teaspoon pure vanilla extract, pink gel food coloring (a few drops).

Instructions

  1. Preheat & Prepare – Set your oven to 350°F and line two cookie sheets with parchment paper or a silicone baking mat.
  2. Mix the Magic – In a stand mixer with a whisk attachment, beat the cake mix, egg, and butter until a soft dough forms.
  3. Sprinkle Fun – Mix in 1 cup of Easter sprinkles.
  4. Shape & Coat – Use a small cookie scoop to form dough balls. Roll them in the remaining sprinkles until fully coated.
  5. Bake to Perfection – Place the dough balls on the prepared sheets and bake for 10-12 minutes. Let them cool completely before assembling.
  6. Whip Up the Frosting – Beat butter, powdered sugar, vanilla, heavy whipping cream, and a few drops of pink gel food coloring until light and fluffy.
  7. Assemble the Sweetness – Scoop the frosting into a piping bag with a star tip. Pair up the whoopie pies, pipe frosting onto one half, and gently press the second half on top.
  8. Enjoy the Treat – Serve these colorful delights and watch them disappear!
