Ingredients
- 2 pounds zucchini, coarsely grated
- 1/4 cup olive oil or butter
- 2 shallots or garlic cloves, minced
- Salt and pepper, to taste
Instructions
- Prepare the Zucchini
- Wash and grate 2 pounds of zucchini.
- Place the grated zucchini in a colander and let it drain for 3–4 minutes. For quicker cooking, wring out the zucchini in a clean cloth towel to remove excess water.
- Sauté the Aromatics
- Heat 1/4 cup of olive oil or butter in a deep skillet over medium heat.
- Add the minced shallots or garlic and sauté until soft and fragrant.
- Cook the Zucchini
- Add the drained zucchini to the skillet and stir to combine.
- Cook over medium to medium-high heat, stirring occasionally, until the mixture softens and reaches a spreadable consistency. This can take 15–20 minutes.
- Lower the heat if the bottom begins to scorch, and scrape up any browned bits for added flavor.
- Season and Serve
- Add salt and pepper to taste.
- Serve warm or cool as a spread, dip, or side dish.
