Instructions

    • Wash and grate 2 pounds of zucchini.
    • Place the grated zucchini in a colander and let it drain for 3–4 minutes. For quicker cooking, wring out the zucchini in a clean cloth towel to remove excess water.
  2. Sauté the Aromatics
    • Heat 1/4 cup of olive oil or butter in a deep skillet over medium heat.
    • Add the minced shallots or garlic and sauté until soft and fragrant.
  3. Cook the Zucchini
    • Add the drained zucchini to the skillet and stir to combine.
    • Cook over medium to medium-high heat, stirring occasionally, until the mixture softens and reaches a spreadable consistency. This can take 15–20 minutes.
