A delicious and easy-to-make breakfast sandwich featuring creamy avocado, crispy bacon, and perfectly cooked eggs.
Ingredients
- 2 large eggs
- 2 slices of bacon
- 1 ripe avocado
- 2 slices of whole grain bread
- 1 tablespoon mayonnaise
- Salt and pepper to taste
- 1 teaspoon olive oil
- Optional: sliced tomato, lettuce, or cheese
Instructions
- In a skillet, cook the bacon over medium heat until crispy, about 5-7 minutes. Remove and let drain on paper towels.
- In the same skillet, add olive oil and crack the eggs into the pan. Cook to your desired doneness, seasoning with salt and pepper. For sunny-side-up, cook for about 2-3 minutes.
- While the eggs are cooking, slice the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it with a fork and season with salt and pepper.
- Toast the slices of whole grain bread until golden brown.
- Spread mayonnaise on one side of each slice of toasted bread.
- On one slice, layer the mashed avocado, followed by the crispy bacon, and then the cooked egg. Add any optional toppings like tomato, lettuce, or cheese if desired.
- Top with the second slice of bread, mayonnaise side down, and press gently.
- Cut the sandwich in half and serve immediately.
Notes
- For a spicy kick, add a few slices of jalapeño or a dash of hot sauce to the sandwich.
- Substitute the bacon with turkey bacon or a plant-based alternative for a lighter option.
