Description

A delicious and easy-to-make breakfast sandwich featuring creamy avocado, crispy bacon, and perfectly cooked eggs.


Ingredients

  • 2 large eggs
  • 2 slices of bacon
  • 1 ripe avocado
  • 2 slices of whole grain bread
  • 1 tablespoon mayonnaise
  • Salt and pepper to taste
  • 1 teaspoon olive oil
  • Optional: sliced tomato, lettuce, or cheese

Instructions

  1. In a skillet, cook the bacon over medium heat until crispy, about 5-7 minutes. Remove and let drain on paper towels.
  2. In the same skillet, add olive oil and crack the eggs into the pan. Cook to your desired doneness, seasoning with salt and pepper. For sunny-side-up, cook for about 2-3 minutes.
  3. While the eggs are cooking, slice the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it with a fork and season with salt and pepper.
  4. Toast the slices of whole grain bread until golden brown.
  5. Spread mayonnaise on one side of each slice of toasted bread.
  6. On one slice, layer the mashed avocado, followed by the crispy bacon, and then the cooked egg. Add any optional toppings like tomato, lettuce, or cheese if desired.
  7. Top with the second slice of bread, mayonnaise side down, and press gently.
  8. Cut the sandwich in half and serve immediately.
