Description

A quick and delicious Easy Beef Stir-Fry with Bok Choy recipe that is perfect for a weeknight dinner.

Ingredients

  • 1 pound flank steak, thinly sliced against the grain
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 4 cups bok choy, chopped
  • 1 red bell pepper, sliced
  • 1 cup snap peas
  • 2 tablespoons oyster sauce
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • Cooked rice or noodles, for serving

Instructions

  1. In a bowl, combine the sliced flank steak, soy sauce, and cornstarch. Mix well and let it marinate for about 15 minutes.
  2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated beef and stir-fry for 3-4 minutes until browned. Remove the beef from the skillet and set aside.
  3. In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and ginger, and stir-fry for about 30 seconds until fragrant.
  4. Add the bok choy, red bell pepper, and snap peas to the skillet. Stir-fry for 3-5 minutes until the vegetables are tender-crisp.
  5. Return the beef to the skillet and add the oyster sauce and sesame oil. Stir everything together and cook for an additional 2 minutes. Season with salt and pepper to taste.
  6. Serve the stir-fry over cooked rice or noodles.

Notes

  • For a spicier kick, add sliced jalapeños or a dash of red pepper flakes while stir-frying.
  • Substitute chicken or tofu for the beef for a different protein option.
