Easy Cherry Amaretto Cake Tiramisu is a creamy and dreamy dessert that combines the flavors of cherries and amaretto in a delightful layered treat.
Ingredients
- 2 cups fresh or frozen cherries, pitted and halved
- 1/2 cup granulated sugar
- 1/4 cup amaretto liqueur
- 1 cup heavy cream
- 8 ounces mascarpone cheese, softened
- 1 teaspoon vanilla extract
- 1/2 cup powdered sugar
- 1 cup strong brewed coffee, cooled
- 1 package (7 ounces) ladyfinger cookies
- Cocoa powder, for dusting
Instructions
- In a medium saucepan, combine the cherries and granulated sugar over medium heat. Cook for about 5 minutes until the cherries soften and release their juices. Stir in the amaretto liqueur and remove from heat. Let cool completely.
- In a large mixing bowl, whip the heavy cream until soft peaks form.
- In another bowl, combine the mascarpone cheese, vanilla extract, and powdered sugar. Gently fold the whipped cream into the mascarpone mixture until smooth and creamy.
- Dip each ladyfinger briefly into the cooled coffee, ensuring they are soaked but not soggy.
- Arrange a layer of soaked ladyfingers in the bottom of a 9×9-inch dish.
- Spread half of the mascarpone mixture over the ladyfingers, followed by half of the cherry mixture.
- Repeat the layers with the remaining ladyfingers, mascarpone mixture, and cherries.
- Cover the dish with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld.
- Before serving, dust the top with cocoa powder for a finishing touch.
Notes
- For a non-alcoholic version, replace the amaretto with almond extract and use almond milk instead of coffee.
- Add a layer of chocolate shavings or grated dark chocolate between the layers for an extra indulgent treat.
