Description

Easy Cherry Amaretto Cake Tiramisu is a creamy and dreamy dessert that combines the flavors of cherries and amaretto in a delightful layered treat.


Ingredients

  • 2 cups fresh or frozen cherries, pitted and halved
  • 1/2 cup granulated sugar
  • 1/4 cup amaretto liqueur
  • 1 cup heavy cream
  • 8 ounces mascarpone cheese, softened
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered sugar
  • 1 cup strong brewed coffee, cooled
  • 1 package (7 ounces) ladyfinger cookies
  • Cocoa powder, for dusting

Instructions

  1. In a medium saucepan, combine the cherries and granulated sugar over medium heat. Cook for about 5 minutes until the cherries soften and release their juices. Stir in the amaretto liqueur and remove from heat. Let cool completely.
  2. In a large mixing bowl, whip the heavy cream until soft peaks form.
  3. In another bowl, combine the mascarpone cheese, vanilla extract, and powdered sugar. Gently fold the whipped cream into the mascarpone mixture until smooth and creamy.
  4. Dip each ladyfinger briefly into the cooled coffee, ensuring they are soaked but not soggy.
  5. Arrange a layer of soaked ladyfingers in the bottom of a 9×9-inch dish.
  6. Spread half of the mascarpone mixture over the ladyfingers, followed by half of the cherry mixture.
  7. Repeat the layers with the remaining ladyfingers, mascarpone mixture, and cherries.
  8. Cover the dish with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld.
  9. Before serving, dust the top with cocoa powder for a finishing touch.

Notes

  • For a non-alcoholic version, replace the amaretto with almond extract and use almond milk instead of coffee.
  • Add a layer of chocolate shavings or grated dark chocolate between the layers for an extra indulgent treat.
