Ingredients

  • 2 cups brewed coffee, cooled
  • 1/2 cup amaretto liqueur
  • 1 package (14 ounces) ladyfinger cookies
  • 1 cup heavy cream
  • 8 ounces mascarpone cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup cherry pie filling
  • 1/4 cup chocolate shavings (optional)
  • Fresh cherries for garnish (optional)

Instructions

  1. In a shallow dish, combine the cooled coffee and amaretto. Set aside.
  2. In a large mixing bowl, whip the heavy cream until soft peaks form. Add the mascarpone cheese, powdered sugar, and vanilla extract. Beat until smooth and well combined.
  3. Quickly dip each ladyfinger into the coffee-amaretto mixture, ensuring they are soaked but not soggy. Arrange a layer of dipped ladyfingers in the bottom of a 9×13-inch baking dish.
  4. Spread half of the mascarpone mixture over the ladyfingers, then spoon half of the cherry pie filling on top.
  5. Repeat the layers with the remaining ladyfingers, mascarpone mixture, and cherry pie filling.
  6. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.
  7. Before serving, garnish with chocolate shavings and fresh cherries if desired.
