A delightful twist on traditional tiramisu, featuring layers of ladyfingers soaked in coffee and amaretto, creamy mascarpone, and cherry pie filling.
Ingredients
- 2 cups brewed coffee, cooled
- 1/2 cup amaretto liqueur
- 1 package (14 ounces) ladyfinger cookies
- 1 cup heavy cream
- 8 ounces mascarpone cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup cherry pie filling
- 1/4 cup chocolate shavings (optional)
- Fresh cherries for garnish (optional)
Instructions
- In a shallow dish, combine the cooled coffee and amaretto. Set aside.
- In a large mixing bowl, whip the heavy cream until soft peaks form. Add the mascarpone cheese, powdered sugar, and vanilla extract. Beat until smooth and well combined.
- Quickly dip each ladyfinger into the coffee-amaretto mixture, ensuring they are soaked but not soggy. Arrange a layer of dipped ladyfingers in the bottom of a 9×13-inch baking dish.
- Spread half of the mascarpone mixture over the ladyfingers, then spoon half of the cherry pie filling on top.
- Repeat the layers with the remaining ladyfingers, mascarpone mixture, and cherry pie filling.
- Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.
- Before serving, garnish with chocolate shavings and fresh cherries if desired.
Notes
- For a lighter version, use reduced-fat cream cheese instead of mascarpone.
- You can substitute the cherry pie filling with fresh berries or other fruit preserves for a different flavor profile.
