Description

Ingredients

  • 2 medium yellow squash, sliced (about 4 cups)
  • 1 medium zucchini, sliced (about 2 cups)
  • 1 small onion, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup milk
  • 1 sleeve Ritz crackers, crushed (about 1 1/2 cups)
  • 2 tablespoons butter, melted
  • 1/4 teaspoon paprika (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 2-quart baking dish.
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced squash, zucchini, and chopped onion. Sauté for about 5-7 minutes until the vegetables are tender. Season with salt, black pepper, and garlic powder.
  3. In a large bowl, combine the sautéed vegetables, sour cream, cheddar cheese, Parmesan cheese, and milk. Mix well until all ingredients are evenly incorporated.
  4. Pour the mixture into the prepared baking dish and spread it out evenly.
  5. In a separate bowl, combine the crushed Ritz crackers with the melted butter and paprika (if using). Mix until the crackers are well coated.
  6. Sprinkle the cracker mixture evenly over the top of the casserole.
  7. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the casserole is bubbly.
  8. Remove from the oven and let it cool for about 5 minutes before serving.
