Ingredients

  • 1 pound flank steak, sliced into thin strips
  • 1 tablespoon vegetable oil
  • 1 medium onion, sliced
  • 1 bell pepper (any color), sliced
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1/4 cup soy sauce
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon ground black pepper
  • 1 teaspoon sugar
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • Cooked rice or noodles, for serving

Instructions

  1. In a skillet over medium-high heat, add the vegetable oil. Sear the sliced flank steak for about 3-4 minutes until browned. Transfer the steak to the crockpot.
  2. In the same skillet, add the sliced onion and bell pepper. Sauté for 2-3 minutes until slightly softened, then add the minced garlic and cook for an additional minute. Transfer the vegetables to the crockpot.
  3. In a bowl, mix together the beef broth, soy sauce, Worcestershire sauce, black pepper, and sugar. Pour this mixture over the steak and vegetables in the crockpot.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the steak is tender.
  5. About 30 minutes before serving, mix the cornstarch and water in a small bowl to create a slurry. Stir this into the crockpot to thicken the sauce.
  6. Serve the pepper steak over cooked rice or noodles.
