Ingredients
- 1 small head of green cabbage, shredded (about 6 cups)
- 1 cup shredded carrots
- 1 red bell pepper, thinly sliced
- 1/2 cup green onions, chopped
- 1/4 cup chopped fresh cilantro
- 1/4 cup slivered almonds
- 1/4 cup sesame seeds
- 1/3 cup rice vinegar
- 1/4 cup soy sauce
- 2 tablespoons sesame oil
- 1 tablespoon honey or maple syrup
- 1 teaspoon grated fresh ginger
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- In a large bowl, combine the shredded cabbage, carrots, red bell pepper, green onions, cilantro, almonds, and sesame seeds.
- In a separate bowl, whisk together the rice vinegar, soy sauce, sesame oil, honey, ginger, garlic, salt, and pepper until well combined.
- Pour the dressing over the cabbage mixture and toss until everything is evenly coated.
- Let the salad sit for at least 15 minutes before serving to allow the flavors to meld.
- Serve chilled or at room temperature.
Notes
- For added protein, consider adding grilled chicken or tofu.
- To make it spicier, add a teaspoon of sriracha or red pepper flakes to the dressing.
