Description

A refreshing and crunchy salad featuring a mix of green and red cabbage, carrots, and a tangy Dijon dressing.


Ingredients

  • 4 cups green cabbage, finely shredded
  • 1 cup red cabbage, finely shredded
  • 1 cup carrots, grated
  • 1/2 cup bell pepper, diced (any color)
  • 1/4 cup green onions, sliced
  • 1/2 cup sunflower seeds (unsalted)
  • 1/2 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine the green cabbage, red cabbage, carrots, bell pepper, green onions, and sunflower seeds. Toss well to mix all the vegetables evenly.
  2. In a separate small bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, honey, salt, and pepper until smooth and well combined.
  3. Pour the dressing over the cabbage mixture and toss until all the vegetables are coated evenly with the dressing.
  4. Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld and the salad to chill.
