Description

A delightful twist on a classic dessert, this Easy Fruity Pebbles Cheesecake combines the creamy richness of cheesecake with the fun and colorful crunch of Fruity Pebbles cereal.

Ingredients

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 1 cup whole milk
  • 1 teaspoon vanilla extract
  • 1 cup pecans, chopped
  • 1 cup caramel sauce (store-bought or homemade)
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract (for whipped cream)
  • Extra pecans for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. In a large mixing bowl, combine the flour, sugar, baking powder, and salt. Mix well.
  3. Add the softened butter, eggs, milk, and 1 teaspoon of vanilla extract to the dry ingredients. Beat on medium speed for about 2 minutes until smooth and well combined.
  4. Fold in the chopped pecans. Pour the batter into the prepared baking pan and spread it evenly.
  5. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Allow the cake to cool in the pan for about 10 minutes.
  6. Using the handle of a wooden spoon or a fork, poke holes all over the top of the cake.
  7. Drizzle the caramel sauce evenly over the cake, allowing it to seep into the holes. Let the cake cool completely.
  8. In a medium bowl, whip the heavy cream, powdered sugar, and 1 teaspoon of vanilla extract until stiff peaks form.
  9. Spread the whipped cream over the cooled cake. Garnish with extra chopped pecans on top.
  10. Refrigerate the cake for at least 1 hour before serving to allow the flavors to meld.

Notes

  • For a richer flavor, try adding a teaspoon of espresso powder to the cake batter.
  • If you prefer a chocolate twist, substitute half of the flour with cocoa powder for a chocolate caramel poke cake.
